1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (adjust for spice level)
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
12 ounces linguine or fettuccine pasta
3 cups chicken broth
1 cup heavy cream
4 ounces cream cheese, cut into cubes
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley, for garnish
Instructions
Season the chicken pieces evenly with half of the Cajun seasoning blend (oregano, thyme, smoked paprika, salt, pepper, cayenne, onion powder, garlic powder).
Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
Stir in the remaining half of the Cajun seasoning blend.
Add the dry pasta and chicken broth to the skillet. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is nearly tender.
Stir in the heavy cream and cubed cream cheese until the cream cheese melts and the sauce thickens slightly.
Return the cooked chicken to the skillet. Stir in the Parmesan cheese until the sauce is smooth and creamy. Heat through for 1 to 2 minutes.
Remove the skillet from the heat. Garnish with fresh parsley before serving your flavorful pasta dinner.
Notes
For a bolder flavor, use a pre-made Cajun seasoning blend instead of mixing the individual spices.
If the sauce seems too thick, add a splash more chicken broth or cream until you reach your desired consistency.
