1/2 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
1 package (8 ounces) cream cheese, softened

Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the cake mix, 1/2 cup melted butter, 1 egg, and 1 teaspoon vanilla extract. Mix until a soft dough forms.
In a separate bowl, beat the softened cream cheese, 1 egg, and 1 teaspoon vanilla extract until smooth. Gradually beat in 1 cup of the powdered sugar until fully combined. This is your cream cheese layer.
Roll the cake mix dough into small balls, about 1 inch in diameter.
Roll each dough ball in the remaining 1 cup of powdered sugar until fully coated.
Press each dough ball down slightly with your palm or the bottom of a glass.
Spoon about 1 teaspoon of the cream cheese mixture over the center of each dough ball. Do not spread it to the edges.
If using, gently press a few festive sprinkles onto the cream cheese topping.
Bake for 10 to 12 minutes. The edges will be set, but the center should still look soft and slightly underdone. This creates the gooey texture.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The centers will set slightly as they cool.
Notes
For the best melt-in-your-mouth texture, do not overbake these cookies. The center should remain soft.
Chill the cream cheese mixture for 15 minutes before assembling if you find it too soft to handle.
You can substitute the yellow cake mix with white cake mix for a slightly lighter flavor.
