Make soft, gooey cinnamon roll bites quickly using refrigerated dough. These poppable treats bake in a buttery cinnamon syrup and top with a simple vanilla glaze for a fast breakfast or dessert.

  • 1 (13.2 ounce) can refrigerated biscuit dough
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1/4 cup heavy cream
  • For the Glaze: 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons milk

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8×8 inch baking pan.
  2. In a small bowl, mix the 1/2 cup granulated sugar and 1 tablespoon cinnamon. Set aside.
  3. Unroll the biscuit dough and cut each biscuit into four equal pieces. You should have about 16 pieces.
  4. In a separate small bowl, combine the melted butter, brown sugar, and heavy cream. Whisk until the brown sugar dissolves slightly.
  5. Dip each dough piece first into the cinnamon-sugar mixture, coating both sides.
  6. Place the coated dough pieces into the prepared baking pan.
  7. Pour the butter, brown sugar, and cream mixture evenly over the dough pieces in the pan.
  8. Bake for 18 to 22 minutes, or until the bites are golden brown and cooked through.
  9. While the bites cool slightly, prepare the glaze. Whisk together the powdered sugar, vanilla extract, and 1 tablespoon of milk in a small bowl. Add the remaining milk, one teaspoon at a time, until you reach a thick but pourable consistency.
  10. Drizzle the vanilla glaze over the warm cinnamon roll bites before serving.

Notes

  • For extra gooey centers, ensure the liquid mixture covers the bottom of the pan well before adding the dough.
  • You can make these ahead and reheat them briefly in the microwave for a fresh taste.
  • If you prefer a thicker glaze, use less milk.
