Make light and airy cloud bread using cottage cheese for a high-protein, low-carb sandwich base. This easy recipe yields a fluffy texture perfect for keto diets.

  • 1 cup cottage cheese (full fat or low fat)
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a food processor or blender, combine the cottage cheese and egg yolks until completely smooth. Scrape down the sides as needed.
  3. In a separate, clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form. This means the peaks hold their shape when you lift the whisk.
  4. Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
  5. Carefully fold in the remaining egg whites until just combined. Do not overmix, or you will lose the airiness.
  6. Spoon six equal mounds of the batter onto the prepared baking sheet. Shape them into rounds about 3 inches wide.
  7. Bake for 25 to 30 minutes, or until the tops are lightly golden brown and the bread is set.
  8. Remove from the oven and let cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely.

  • For best results, use room temperature eggs.
  • You can use this bread as a sandwich bread alternative or toast it lightly.
  • If you prefer a less tangy flavor, rinse the cottage cheese lightly after blending, but be sure to drain it well before proceeding.
