Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 tablespoon vanilla extract
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
4 ounces unsweetened chocolate, melted and cooled slightly
1/2 cup semi-sweet chocolate chips
1/2 cup rainbow candy-coated chocolate pieces (or sprinkles)
For the Fudge Glaze:
1 cup powdered sugar
2 tablespoons milk or cream
1 tablespoon melted butter
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Stir in the melted and cooled unsweetened chocolate and the semi-sweet chocolate chips by hand. The dough will be thick.
Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. These cookies spread minimally.
Press a few extra rainbow candy-coated pieces onto the top of each dough ball.
Bake for 10 to 12 minutes. The edges should look set, but the center should still look slightly soft and fudgy.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
While the cookies cool, prepare the fudge glaze. Whisk together the powdered sugar, milk, melted butter, vanilla extract, and salt until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
Once the cookies are completely cool, drizzle the fudge glaze over the tops. Immediately sprinkle a few more rainbow candies on top of the wet glaze.
Let the glaze set before serving your homemade cosmic brownie copycat treats.
Notes
For the best fudgy texture, use high-quality cocoa powder.
If you want a crackly top similar to a true brownie, chill the dough for 30 minutes before scooping and baking.
For a thicker cookie, use a cookie scoop and slightly underbake them.
If you cannot find candy-coated chocolate pieces, use rainbow jimmies or nonpareils for the topping.
