  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup or honey
  • 1/4 cup almond butter or peanut butter
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 24 tablespoons milk (dairy or non-dairy, as needed for consistency)
  • 1/4 cup rainbow candy-coated chocolate pieces (for topping)

Instructions

  1. Combine the oat flour, protein powder, and cocoa powder in a medium bowl. Mix well to remove any clumps.
  2. Add the maple syrup, nut butter, melted coconut oil, and vanilla extract to the dry ingredients.
  3. Mix everything together using a sturdy spoon or your hands until a thick, uniform dough forms.
  4. If the mixture is too dry and crumbly, add milk one tablespoon at a time until the dough holds together when pressed.
  5. Roll the dough into small, uniform balls, about 1 inch in diameter. You should get about 12 to 15 bites.
  6. Place the balls on a parchment-lined plate or tray.
  7. Gently press the rainbow candy-coated chocolate pieces onto the top of each bite to mimic the topping.
  8. Refrigerate the protein bites for at least 30 minutes to allow them to firm up before serving.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • If you do not have oat flour, pulse rolled oats in a food processor until they reach a fine flour consistency.
  • Store these fudgy protein truffles in an airtight container in the refrigerator for up to one week.
  • You can microwave the dough briefly (10 seconds) if the nut butter makes it too stiff to mix.
