  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup cherry or grape tomatoes, halved
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all vegetables: halve the tomatoes, dice the peppers and onion, and mince the jalapeño if you are using it. Chop the cilantro.
  2. In a large bowl, combine the rinsed black beans, drained corn, tomatoes, red pepper, green pepper, red onion, jalapeño, and cilantro.
  3. In a small bowl, whisk together the olive oil, lime juice, ground cumin, salt, and black pepper to create the zesty vinaigrette dressing.
  4. Pour the dressing over the bean and vegetable mixture. Gently toss everything together until all ingredients are evenly coated.
  5. For the best flavor, cover the bowl and refrigerate for at least 30 minutes before serving. This allows the flavors to meld.
  6. Serve your Cowboy Caviar cold or at room temperature with tortilla chips or as a topping for tacos.
