Achieve restaurant-quality, extra crispy air fryer chicken wings in under 30 minutes. This foolproof method uses a simple dry rub and baking powder to guarantee a crunchy exterior while keeping the inside juicy. It is a healthier alternative to deep frying and requires minimal cleanup.

Ingredients

Scale
  • 2 lbs chicken wing sections (flats and drumettes)
  • 1 tablespoon baking powder (aluminum-free for best results)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions

  1. Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
  2. In a medium bowl, combine the baking powder, salt, garlic powder, onion powder, black pepper, paprika, and cayenne pepper. Mix the dry rub thoroughly.
  3. Add the dried chicken wings to the bowl. Toss well until every wing piece is evenly coated with the dry rub mixture.
  4. Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius).
  5. Arrange the seasoned wings in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary to allow air circulation.
  6. Air fry for 15 minutes at 380 degrees Fahrenheit (195 degrees Celsius).
  7. After 15 minutes, carefully flip the wings. Increase the temperature to 400 degrees Fahrenheit (200 degrees Celsius).
  8. Continue to air fry for another 10 to 15 minutes, or until the wings are deep golden brown and extremely crispy.
  9. Remove the wings from the air fryer. If you prefer sauced wings, toss them immediately in your favorite sauce (like buffalo or BBQ) while hot. Serve immediately for the best texture.

Notes

  • For the crispiest skin, do not skip drying the wings thoroughly before seasoning.
  • If you plan to sauce the wings, toss them immediately after they come out of the air fryer so the sauce adheres to the hot, crisp surface.
  • If you prefer a dry rub finish, you can lightly sprinkle additional seasoning mix over the wings after cooking.
  • For a quick weeknight dinner, serve these wings alongside a simple side salad or celery sticks.
