  • 1 cup chicken broth
  • 1 (8 ounce) package cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 2 tablespoons minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (for thickening, optional)
  • 2 tablespoons cold water (for slurry, optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the chicken broth, cream cheese cubes, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper until mostly smooth.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until the chicken is tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce. Stir to combine.
  6. If you prefer a thicker sauce, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the sauce in the slow cooker. Cook on HIGH for 10 to 15 minutes, uncovered, until the sauce thickens.
