Ingredients
Scale
2 cups cooked, shredded chicken (rotisserie chicken works well)
4 cups fresh broccoli florets
1 can (10.5 ounces) condensed cream of chicken soup
1 cup mayonnaise
1 cup shredded sharp cheddar cheese, divided
1 teaspoon curry powder (optional, for flavor variation)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crushed buttery crackers or breadcrumbs
2 tablespoons melted butter
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Blanch the broccoli florets in boiling water for 3 minutes until they are bright green and slightly tender-crisp. Drain them well.
In a large bowl, combine the cream of chicken soup, mayonnaise, half of the cheddar cheese (1/2 cup), salt, pepper, and curry powder if you are using it. Mix until smooth.
Gently fold the cooked chicken and the blanched broccoli into the sauce mixture until everything is evenly coated.
Spread the chicken and broccoli mixture into the prepared baking dish.
Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top of the casserole.
In a small bowl, mix the crushed crackers or breadcrumbs with the melted butter. Sprinkle this topping over the cheese layer.
Bake for 25 to 30 minutes, or until the casserole is bubbly throughout and the topping is golden brown.
Let the casserole rest for 5 minutes before you serve it.
Notes
For maximum convenience, use pre-cooked rotisserie chicken. This speeds up your prep time significantly.
If you prefer a lighter dish, you can substitute half of the mayonnaise with plain Greek yogurt.
Serve this savory baked chicken dish over cooked white rice for a complete family favorite dinner idea.
