  • 1 bag (16 ounces) mini pretzels, traditional twist shape
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper. Spread the mini pretzels in a single layer on the prepared sheets.
  2. In a medium saucepan, combine the butter and brown sugar. Heat over medium heat, stirring constantly until the butter melts and the sugar dissolves. Bring the mixture to a full, rolling boil. Let it boil, without stirring, for exactly one minute.
  3. Remove the saucepan from the heat immediately. Stir in the vanilla extract. Then, quickly stir in the baking soda. The mixture will foam up significantly.
  4. Working quickly, pour the hot toffee mixture evenly over the pretzels on the baking sheets. Use a spatula to gently spread the toffee coating over the pretzels. Try to coat them as evenly as possible.
  5. Bake for 20 minutes. Remove the sheets from the oven and gently stir the pretzels with a spatula to ensure even baking and crunch development. Return to the oven and bake for another 15 to 20 minutes, stirring once halfway through. The toffee should look deep amber.
  6. Remove the pretzels from the oven and immediately transfer them to a large piece of wax paper or parchment paper to cool completely. Do not let them sit on the hot baking sheet, or they will stick and become too hard.
  7. Once completely cool and hardened, break apart any large clumps. Store in an airtight container at room temperature.
