Make this easy, no-bake Grasshopper Pie for a cool, refreshing dessert. It features a rich chocolate cookie crust and a light, creamy mint filling perfect for any gathering.

Ingredients

Scale
  • 1 1/2 cups chocolate cookie crumbs (about 24 cookies)
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon mint extract
  • 12 drops green food coloring (optional)
  • 1 1/2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar (for whipped cream)
  • Optional garnish: Chocolate shavings or whipped topping

Instructions

  1. Prepare the crust: Combine the chocolate cookie crumbs and melted butter in a medium bowl. Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch pie plate. Place the crust in the freezer while you prepare the filling.
  2. Make the cream cheese base: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add 1 cup of powdered sugar, vanilla extract, and mint extract. Beat until fully combined. Add green food coloring now if you are using it, mixing until the color is uniform.
  3. Whip the cream: In a separate, clean bowl, beat the cold heavy whipping cream and the remaining 1/4 cup of powdered sugar until stiff peaks form.
  4. Combine the filling: Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it. Then, fold in the remaining whipped cream until no white streaks remain. Do not overmix.
  5. Assemble the pie: Spoon the creamy mint filling into the chilled chocolate cookie crust, spreading it evenly.
  6. Chill: Cover the pie loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the filling is firm.
  7. Serve: Before serving, garnish with chocolate shavings or a swirl of whipped topping. Slice and serve cold.

Notes

  • For a richer chocolate flavor in the crust, use chocolate sandwich cookies with cream filling, removing the filling first.
  • If you prefer a frozen grasshopper pie, freeze the assembled pie for at least 4 hours before serving.
  • You can substitute the mint extract with 1 tablespoon of Crème de Menthe liqueur for an adult version, but omit the food coloring if using the liqueur.
