Make this comforting, one-pot hamburger vegetable soup for an easy weeknight dinner. It combines savory ground beef flavor with plenty of vegetables in a rich broth.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cabbage (optional)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the olive oil, onion, carrots, and celery to the pot with the beef. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the beef broth and add the diced tomatoes (with their juice), diced potatoes, Italian seasoning, Worcestershire sauce, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the potatoes are tender.
  6. If using, stir in the shredded cabbage during the last 5 minutes of cooking.
  7. Taste and adjust seasonings as needed before serving this family friendly soup recipe.

Notes

  • For a richer flavor, use low sodium beef broth and add a pinch of dried thyme with the Italian seasoning.
  • You can substitute ground turkey for the ground beef if you prefer a lighter option.
  • This soup freezes well; cool completely before transferring to an airtight container.
