Ingredients
Scale
1 (15-ounce) can black beans, rinsed and drained well
3 large eggs
1/2 cup pure maple syrup
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1/2 cup oat flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup dark chocolate chips (for batter)
1/4 cup naturally colored candy pieces (for topping)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
Combine the rinsed black beans, eggs, maple syrup, coconut oil, and vanilla extract in a food processor. Blend until completely smooth, scraping down the sides as needed.
Add the cocoa powder, oat flour, baking powder, and salt to the food processor. Pulse until just combined. Do not overmix.
Stir in the dark chocolate chips by hand.
Pour the batter into the prepared pan and spread evenly.
Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs, not wet batter.
Let the brownies cool completely in the pan on a wire rack. Cooling is essential for fudgy texture.
Once cool, melt a small amount of coconut oil mixed with a few drops of natural food coloring (like spirulina for blue/green or beet powder for red/pink). Drizzle or spread a thin layer over the top. Immediately sprinkle with the naturally colored candy pieces.
Lift the brownies out using the parchment paper overhang and cut into squares.
Notes
Rinsing the black beans thoroughly removes the canned flavor. Patting them dry slightly helps achieve a better texture.
For the best fudgy texture, chill the brownies for at least one hour after they cool before slicing.
You can substitute almond flour for oat flour for a gluten free healthy brownie option.
Use high-quality cocoa powder to maximize the rich dark chocolate flavor.
