Make these easy, flaky Mediterranean Spinach and Feta Cheese Crisps using puff pastry. They are perfect as a party snack or a light appetizer.

  • 1 package (14.1 ounces) frozen puff pastry, thawed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 10 ounces fresh spinach, chopped
  • 4 ounces feta cheese, crumbled
  • 1 large egg, beaten (for egg wash)
  • 1/4 teaspoon ground black pepper
  • Pinch of nutmeg

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line two baking sheets with parchment paper.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the chopped spinach to the skillet. Cook until the spinach has wilted completely and all the liquid has evaporated. Remove from heat and let the mixture cool slightly.
  4. In a bowl, combine the cooled spinach and onion mixture with the crumbled feta cheese, black pepper, and nutmeg. Mix well.
  5. Unfold the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 9 equal squares.
  6. Place about 1 tablespoon of the spinach and feta filling onto the center of each pastry square.
  7. Fold the pastry over to form a triangle or a small rectangle, pressing the edges firmly to seal. You can crimp the edges with a fork for extra security.
  8. Place the sealed crisps onto the prepared baking sheets. Brush the tops lightly with the beaten egg wash.
  9. Bake for 15 to 18 minutes, or until the pastry is golden brown and puffed.
  10. Remove from the oven and let cool slightly before serving.

Notes

  • For extra flavor, add 1 teaspoon of fresh dill to the filling mixture.
  • You can prepare these spinach and feta bites ahead of time and refrigerate them for up to 24 hours before baking.
  • If you prefer a thinner crisp, roll the pastry out slightly before cutting the squares.
