24 Oreo cookies, crushed
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, cold
1 cup crushed Oreo cookies (for filling)
1/2 cup crushed Oreo cookies (for topping)
Instructions
Combine the 24 crushed Oreo cookies and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan. Chill the crust for 15 minutes.
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
In a separate bowl, whip the cold heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until just combined.
Fold in the 1 cup of crushed Oreo cookies for the filling.
Spread the filling evenly over the chilled crust.
Cover the cheesecake and chill in the refrigerator for at least 6 hours, or preferably overnight, until firm.
Before serving, top the cheesecake with the remaining 1/2 cup of crushed Oreo cookies. Release the springform side and slice.
Notes
For an even richer chocolate flavor, use chocolate cream cheese if available.
You can use a food processor to crush the cookies quickly for both the crust and filling.
If you want a firmer texture, you can add 1 teaspoon of unflavored gelatin dissolved in 1/4 cup of hot water to the cream cheese mixture before folding in the whipped cream.
