Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the cocoa powder, protein powder, flour, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the 1/2 cup of chocolate chips meant for the batter.
Spread the batter evenly into the prepared baking pan.
Bake for 22 to 25 minutes. The edges should look set, but the center should still be slightly soft for a fudgy texture.
Remove the pan from the oven. Immediately sprinkle the rainbow candy-coated chocolate chips evenly over the top surface.
Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting them into squares.
Notes
For the best fudgy texture and to avoid chalkiness, use a high-quality chocolate or vanilla protein powder that blends well. Casein protein tends to yield a denser, fudgier result than pure whey.
If you prefer a thicker brownie, use a 7×7 inch pan and increase the baking time by about 5 minutes.
You can make a simple chocolate glaze using powdered sugar, cocoa powder, milk, and a touch of vanilla to drizzle over the top before adding the candy chips for an extra layer of richness.
