1 cup packed light brown sugar
1/2 cup granulated sugar
1 cup creamy peanut butter
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy.
Beat in the peanut butter until combined. Mix in the eggs one at a time, then add the vanilla extract. Scrape down the sides of the bowl as needed.
In a separate medium bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the cookie dough.
Scoop rounded tablespoons of dough and roll into balls. Place them 2 inches apart on the prepared baking sheets.
Use a fork to press down on each dough ball, creating a crisscross pattern. Press once vertically, then once horizontally.
Bake for 10 to 12 minutes, or until the edges are lightly golden brown. The centers will still look slightly soft.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the signature crisscross pattern, chill the dough for 15 minutes before flattening with the fork. This prevents the dough from spreading too much in the oven.
Use creamy peanut butter for the softest texture. Natural peanut butter may change the texture of the dough.
