  • 1 pound beef tenderloin or tri-tip steak
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 baguette, sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil (for bread)
  • 1 large yellow onion, thinly sliced
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 1/2 cup sour cream
  • 2 tablespoons prepared horseradish
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh chives, chopped (for garnish)

Instructions

  1. Prepare the steak: Rub the steak with 1 tablespoon of olive oil, salt, and pepper. Sear the steak in a hot skillet for 3 to 5 minutes per side for medium-rare. Remove the steak and let it rest for 10 minutes before thinly slicing against the grain.
  2. Make the caramelized onions: Melt the butter in a skillet over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, for 20 to 25 minutes until deeply browned and sweet. Stir in the brown sugar during the last 5 minutes of cooking. Remove from heat.
  3. Prepare the horseradish sauce: In a small bowl, whisk together the sour cream, prepared horseradish, and Dijon mustard until smooth.
  4. Toast the bread: Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices lightly with olive oil. Arrange them on a baking sheet and toast for 6 to 8 minutes, flipping halfway, until golden brown and crisp.
  5. Assemble the crostini: Spread a small amount of the creamy horseradish sauce onto each toasted baguette slice. Top with a layer of caramelized onions. Place 1 or 2 thin slices of steak over the onions.
  6. Garnish and serve: Sprinkle the assembled steak crostini with fresh chopped chives. Serve immediately as an elegant entertaining recipe.
